ROASTED BROCCOLINI & GARLIC

 

Broccolini is a cruciferous vegetable that's quite similar to ordinary broccoli, except that it has longer, slimmer stems that are more tender and less fibrous. You can use this method to prepare either one. Blanching takes an extra step, but it results in a firm, flavorful, colorful side dish that offers a lot of flavor and texture.

Ingredients

  • 1 bunch broccolini (about 1 lb), or use regular broccoli
  • 6-8 whole garlic cloves, peeled and halved
  • 2 T. olive oil
  • ½ tsp. salt
  • Black pepper to taste

Instructions

  • Preheat oven to 375 degrees.
  • Prepare ice water bath in a large stainless steel bowl (add cold water and ice cubes to bowl).
  • While oven is preheating, bring large pot of water to a boil.
  • Once water comes to a boil, add broccolini to pot and blanch until broccolini turns bright green (3-4 minutes).
  • Using tongs, remove broccolini from boiling water and place into ice water bath. Sit in ice water bath for 10 minutes. Remove and dry off.
  • Place cooled and blanched broccolini in large bowl and toss with garlic, olive oil and seasoning.
  • Place on baking sheet and roast for 10-15 minutes or until doneness of your preference.

Notes
