½can Coconut milk,full fat
½tsp.Pure vanilla extract
½tsp.Ground cinnamon
½tsp.Ground nutmeg
2T.Coconut oil,separated
Instructions
In a large mixing bowl, stir together the coconut milk with the vanilla extract and spices.
Preheat a large saute pan to medium heat. Add 1-2 tsp. of coconut oil to the pan.
Working in batches of 2-4 slices at a time, evenly coat each slice of bread with the coconut milk batter. Feel free to soak the bread for 5 minutes prior to cooking.
Sear each side of the coated bread for 2-3 minutes on each side.
Finish baking in the oven if desired (not necessary). Enjoy!
