Heat a large stock pot to medium-high heat. Add oil and heat until it runs like water.
Cook onions in oil until they are translucent. Add garlic and spices, cooking until fragrant, about 1-2 minutes.
Add mushroom and tamari, stir and cover. Let cook on medium heat for about 10 minutes.
Uncover, stir and let cook for another 10 minutes.
Reduce to medium-low heat, adding coconut milk and vegetable stock. Simmer for about 5 minutes. Serve and enjoy!
