Place 5 lb. turkey breast in a large roasting pan.
Use a sharp knife to deep score (cut) into the thickest part of the turkey breast, making 2-4 scores.
Using the same sharp knife, make smaller scores (2-3 total) into the thinner part of turkey breast.
Take the chopped garlic cloves and stuff them into the scores, “plugging” the garlic into the turkey breast.
Add the chopped herbs to the turkey breast, plugging them with the garlic cloves.
Drizzle olive oil over the turkey breast. Cover the pan with foil and place in the fridge for at least 90 minutes.
Preheat oven to 375 degrees. Cook covered herbed turkey breast for 60 minutes. Remove the foil and cook for another 30 minutes or until internal temperature 150-155 degrees.
Allow the turkey to rest for 15-30 minutes before slicing.
