Preheat an oven to 350 degrees.
Add both flours, flaxmeal, baking powder, salt and cinnamon into a large mixing bowl. Whisk and set aside.
Grate your apple of choice and place in a separate mixing bowl.
Add eggs, extract, zest, lemon juice, maple syrup, and coconut oil to the apples and mix until well combined.
Add the wet ingredients to the dry ingredients and stir with a spatula until combined. Avoid over-mixing.
In a small bowl, combine topping ingredients and stir well.
Top each muffin with a small amount of the almond walnut mixture.
Bake for 25-30 minutes. Enjoy!
