CILANTRO CASHEW DRESSING

Looking for more ways to use cilantro? You'll love the way this dressing pairs with seasonal summer produce, Mexican-inspired dishes, and well, pretty much anything. Seriously – once you start making your own salad dressing, you might never go back to store-bought. This recipe does require a powerful blender or food processor (we like Vitamix).

Ingredients

  • 1 cup raw cashews
  • 2 cups water
  • 1/2 bunch fresh cilantro
  • 1/2 lime, juiced
  • 1/4 tsp. sea salt

Instructions

  • Add cashews to Vitamix and thoroughly pulverize. Slowly add water until creamy, stopping at your desired level of creaminess (this will take anywhere from 1-2 cups of water).
  • Add cilantro, lime, and salt. Puree until smooth.

Notes

Nutrition Information: If you're not a cilantro fan, feel free to substitute any herb of your choice. Fresh dill or rosemary would make great alternatives. Gluten-free, dairy free.
