ROSEMARY HONEY DRESSING

- 1 avocado, flesh removed
- 2 T. fresh rosemary
- 2 T. honey (local if possible)
- ¼ cup champagne vinegar
- 1/3 cup extra virgin olive oil, or oil of choice
- ¼ tsp. Kosher salt
- Water for thinning
Food Processor:
Place all ingredients EXCEPT FOR the oil and water into the food processor.
Turn processor on and let everything blend together.
With the food processor continuing to run, slowly add your oil to emulsify the dressing.
Adjust taste with the salt, pepper, and honey, mixing after each addition.
Blend water into the dressing if it is too thick to pour.
Blender:
Place all ingredients EXCEPT FOR the oil and water into the blender.
Turn processor on and let everything blend together.
While continuing to blend, slowly add your oil to emulsify the dressing.
Adjust taste with the salt, pepper, and honey, blending after each addition.
Blend water into the dressing if it is too thick to pour.
Hand Mixer or Immersion Blender :
Place all ingredients EXCEPT FOR the oil and water into a container.
Place the hand blender into the dressing and turn it on. Mix thoroughly. (Make sure the blade is completely immersed into the product)
While continuing to blend, slowly add your oil to emulsify the dressing.
Adjust taste with the salt, pepper, and honey.
Blend water into the dressing if it is too thick to pour.
