PISTACHIO ZUCCHINI CRUDO

- 3 T. extra virgin olive oil
- 1 ½ T. lemon juice, fresh
- 2 lbs zucchini, very thinly sliced lengthwise on mandolin or with knife
- 1 tsp. lemon zest, finely grated
- 1/3 cup parmesan cheese, shaved
- 3 T. pistachios, lightly toasted
- Salt and pepper to taste
In a small bowl, whisk the oil with the lemon juice and zest. Season with salt and pepper.
In large bowl, toss the sliced zucchini with the lemon dressing.
Add the parmesan cheese and pistachios and toss again. Serve and enjoy!
