ANCHO MARINADE

- 4-5 each Ancho peppers, dried, whole
- 1 each Garlic bulb, skinned (pre-roast garlic in advance if wanted)
- 1 ½ cups Olive oil
- 1 ¼ tsp. Salt
Remove seeds and stems from dried peppers. Throw away seeds.
Tear dried pepper skins apart into big pieces and put into a high-speed blender.
Add raw or roasted garlic, olive oil, and salt to the blender.
Blend thoroughly until the mixture is extremely smooth. If you don’t blend completely then flaky pieces of the pepper will remain.
Use to marinade shrimp, chicken, or other protein of choice.
