Add nuts, dried fruit, oats and natural sweetener (e.g., honey) to a food processor. Puree or pulse until well combined. You may need to scrape down the sides once or twice with a spatula then continue to puree.
If the mixture does not stick together well then add 2 T. of water, 1-2 T. of additional honey OR an extra ¼ cup of dates to allow the hike bites to come together.
Add chocolate chips and pinch of salt to the mixture and pulse 4-5 times, just until chopped up.
Form hike bites into balls or press mixture into a baking sheet and cut into squares. You may need to refrigerate the hike bites for 10-15 minutes if you want to cut them into squares.
Keep hike bites in the fridge in an airtight container up to 2 weeks. These freeze well.
