- Preheat oven to 400 degrees. 
- Place cut sweet potato wedges in a large bowl and toss with 2 T. of olive oil, salt and pepper. 
- Spread sweet potatoes onto a baking sheet and begin to roast in the oven, roughly 20 minutes. Check on potatoes after 10 minutes and turn if needed. 
- While sweet potatoes are roasting, preheat a cast iron pan to medium high heat. 
- Form 4, 5-6 oz. patties and season with salt and pepper on both sides. 
- Sear patties in the heated cast iron pan for at least 4 minutes per side.  Place 1 slice of cheese on top of each burger. 
- Finish cooking patties in the oven for another 5-8 minutes or until desired doneness. The cheese should melt in the oven. 
- Remove sweet potatoes and burgers from the oven and allow everything to cool for 3-5 minutes. 
- Assemble burgers with a toasted bun, lettuce, tomato and onion. 
- Enjoy burger, sweet potatoes and any other vegetable of choice.
