Roast almonds on a parchment paper lined sheet pan for 5-10 minutes at 350F until lightly golden brown.
Remove from oven, using a food processor combine remaining ingredients with hot almonds and blend for 5-10 minutes. Finished product should have small almond texture.
Transfer almond yogurt to mixing bowl and cool using ice bath.
