APPLE-SAGE TURKEY SAUSAGE

Ingredients

  • 2 lbs. Ground turkey
  • 2 each Granny smith apples, peeled and minced
  • 2 tsp. Maple syrup
  • 2 tsp. Ground sage
  • 2 tsp. Red pepper flakes
  • 2 tsp. Ground thyme
  • 1 tsp. Garlic powder
  • 1 tsp. Onion powder
  • ¼ tsp. Cayenne pepper
  • to taste Salt and pepper
  • 4 T. Olive oil, separated

Instructions

  • Stir together all ingredients except for the ground turkey, maple syrup, and apple in a small bowl.
  • Line a baking sheet with foil or parchment paper and set aside.
  • Wearing gloves, in a large bowl, break up the ground turkey a bit, then pour in the seasoning mixture, maple syrup, and apple. Use your hands to combine the mixture.
  • Divide the mixture into 16, 2oz portions, then form into patties about 2 ½-inches wide.
  • Place patties on the prepared baking sheet, cover with plastic wrap, and refrigerate for 30 minutes.
  • When you’re ready to cook the sausage, heat a splash of oil in a nonstick or cast iron pan over medium heat.
  • Working in batches, sear the patties for 3-4 minutes per side, or until internal temperature is 165F. Enjoy!
