CUCUMBER-GINGER MINT FRESCA

Ingredients

  • 2 each English cucumbers, large dice
  • 1 cup Lime juice, freshly squeezed
  • 2/3 cup Agave nectar
  • 10-15 each Mint leaves
  • 1-2 inch Ginger, fresh, peeled
  • 4 cups Water, 2 cups reserved

Instructions

  • Place all ingredients in a blender. Add 2 cups of water and blend until the mixture is very smooth.
  • Place a sieve or mesh strainer over container or pitcher. Pour the fresca through the strainer to remove the pulp. Add the remaining 2 cups of water.
  • Cover and chill until ready to serve.
