STRAWBERRY BALSAMIC VINAIGRETTE

Ingredients

  • 4-6 each Strawberries, whole, stem removed
  • 1/3 cup Olive oil
  • 2 T. Coconut oil, room temperature or melted if desired
  • ¼ cup Balsamic vinegar
  • 2 T. Honey, local
  • ½ tsp. Salt
  • 1 pinch Black pepper, optional

Instructions

  • Combine all ingredients to a blender and puree until smooth.
  • Season dressing to taste and adjust as desired.

Notes

Servings: 8-10
Serving Size: 1 ½ T.
Nutrition Information: This dressing is slightly thicker than most vinaigrettes due to the honey and coconut oil. Unlike creamy dressings, this provides small amounts of vitamin C from the strawberries and antimicrobial compounds from the honey. Gluten-free, nut free, dairy free.
