Roasted Red Bell Pepper Soup

Garlic – chopped

Cooking Oil

Sherry

Chili Powder

Paprika

Oregano

Instructions
Preheat oven to 350 degrees
Roast onions, garlic, red bell pepper in an oven with Chili powder, paprika, oregano, salt, & black pepper for 15 min
Add ingredients to a pot with oil and heat until sizzling
Deglaze with sherry and reduce
Add vegetable stock and simmer until vegetables are mashable
Blend with an immersian blender or a vitamix
Adjust for seasonings
