STRAWBERRY BALSAMIC VINAIGRETTE

- 4-6 each Strawberries, whole, stem removed
- 1/3 cup Olive oil
- 2 T. Coconut oil, room temperature or melted if desired
- ¼ cup Balsamic vinegar
- 2 T. Honey, local
- ½ tsp. Salt
- 1 pinch Black pepper, optional
Servings: 8-10
Serving Size: 1 ½ T.
Nutrition Information: This dressing is slightly thicker than most vinaigrettes due to the honey and coconut oil. Unlike creamy dressings, this provides small amounts of vitamin C from the strawberries and antimicrobial compounds from the honey. Gluten-free, nut free, dairy free.
