Preheat oven to 350 degrees.
Place chicken breasts or chicken thighs on a large baking sheet. Keep these to one side of the pan.
Add remaining ingredients to the pan. Feel free to mix the vegetables and grain together or leave separated on the pan.
Drizzle olive oil on top of all ingredients.
Sprinkle seasoning on top of chicken, vegetables and grain.
Bake for 20-25 minutes or until the chicken is done.
Once cooled, evenly distribute the ingredients into two Tupperware containers or onto two plates. Use this meal for lunches or dinners for the week
