Ingredients
- 4-5 each Ancho peppers, dried, whole
- 1 each Garlic bulb, skinned (pre-roast garlic in advance if wanted)
- 1 ½ cups Olive oil
- 1 ¼ tsp. Salt
Instructions
- Remove seeds and stems from dried peppers. Throw away seeds.
- Tear dried pepper skins apart into big pieces and put into a high-speed blender.
- Add raw or roasted garlic, olive oil, and salt to the blender.
- Blend thoroughly until the mixture is extremely smooth. If you don’t blend completely then flaky pieces of the pepper will remain.
- Use to marinade shrimp, chicken, or other protein of choice.
