  • 8 cups Arugula, fresh and packed
  • 3 each Garlic cloves, peeled
  • 1 cup Parmesan cheese, shredded
  • 1-2 T. Pine nuts or walnuts, roasted
  • ¼ cup Extra virgin olive oil
  • to taste Salt and pepper


  • In a food processor combine first four ingredients (batches if necessary), 2 T. of EVVO, S&P and pulse to combine.
  • In mixing bowl combine contents from food processor and remaining EVOO.
  • Check consistency and adjust seasonings.
  • Place in quart container, plastic wrap sealing air inside container, place lid on container. Enjoy!
