Skill Level: Beginner
- 8 cups Arugula, fresh and packed
- 3 each Garlic cloves, peeled
- 1 cup Parmesan cheese, shredded
- 1-2 T. Pine nuts or walnuts, roasted
- ¼ cup Extra virgin olive oil
- to taste Salt and pepper
- In a food processor combine first four ingredients (batches if necessary), 2 T. of EVVO, S&P and pulse to combine.
- In mixing bowl combine contents from food processor and remaining EVOO.
- Check consistency and adjust seasonings.
- Place in quart container, plastic wrap sealing air inside container, place lid on container. Enjoy!
