Yields: 2 Servings
Baja Sauce Ingredients:
- 1/4 cup plain whole-fat Greek yogurt
- 1/4 cup veganaise or choice of mayo
- 1/2 tsp cumin
- 1/4 tsp Old Bay seasoning
- 1/3 tsp adobo sauce (depending on spice level preference)
- 2 tbsp fresh lime juice
- ¼ cup minced fresh cilantro (save some for garnish)
- salt/pepper to taste
Directions:
- Whisk all ingredients together!
Shrimp + Seasoning:
- 12 large shrimp (frozen or fresh)
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp to 1 tbsp chili powder (depending on spice level preference)
- 1/2 tsp salt/pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- ½ tsp Old Bay
- Oil for cooking
Directions:
- Combine fresh shrimp, chili powder, cumin, oregano, chili, salt, pepper, garlic powder, onion powder & old bay seasoning in a bowl. Stir well to coat shrimp with spices. (See step two if using frozen shrimp).
- Coat the bottom of a large skillet with oil and heat over medium-high heat for 2 minutes. Add shrimp to oil and pan sear for 2-3 minutes on each side for even cooking until shrimp is pink and lightly charred. If using frozen shrimp, add seasoning to shrimp after they are in the pan for 30 seconds to allow any excess water to evaporate and seasoning to absorb.
- To Serve: Build your tacos on flour or corn tortillas with shrimp, cabbage slaw of choice (Honey Lime Slaw is our recommendation!). Roasted Corn & Pickled Red Onions are excellent additions. Drizzle with baja sauce and enjoy!
Honey Lime Slaw:
- 1 cups shredded Napa cabbage or coleslaw mix
- 1 cup shredded carrot
- 1–2 Tablespoons fresh lime juice (juice of 1 lime)
- 1 Tbsp honey
- 1 Tbsp Rice Vinegar
- 1/4 tsp salt
- 1/4 tsp pepper
- ⅛ tsp Celery Seed
