Blueberry Vinaigrette

Ingredients:

½ cup Blueberries, fresh

¼ cup Red wine vinegar

1 T. Honey, local if possible

½ cup Extra virgin olive oil or oil of choice (e.g., grapeseed oil)

¼ tsp. Salt

pinch Black pepper

for thinning Water

Directions:

Food Processor: 

  1. Place all ingredients but the oil and water into the processor.
  2. Turn processor on and let everything blend together.
  3. Slowly add your oil to emulsify dressing.
  4. Adjust taste with the salt, pepper and honey.
  5. Add water if the dressing is too thick to pour.

Blender:

  1. Place all ingredients but the oil and water into the blender.
  2. Turn processor on and let everything blend together.
  3. Slowly add your oil to emulsify dressing.
  4. Adjust taste with the salt, pepper and honey.
  5. Add water if the dressing is too thick to pour.

Hand Blender: 

  1. Place all ingredients but the oil and water into a container.
  2. Put Hand Blender into product and turn it on, let everything blend together. (Make sure the blade is completely emerged into the product)
  3. Slowly add your oil to emulsify dressing.
  4. Adjust taste with the salt, pepper and honey.
  5. Add water if the dressing is too thick to pour.
