Bone-In Pork Chop with Apricot Lime Glaze

Serve this bone-in pork chop with the delicious Apricot Lime Glaze or with your favorite BBQ sauce.  Add our Cauliflower Puree and some fresh greens to complete the meal.

Ingredients:

4, 6 oz. Pork chops, bone-in, Heritage Farms pork (local if possible)
1 T. Grapeseed oil
½ tsp. Kosher salt
¼ tsp. Black pepper – freshly cracked

Preparation:

1. Preheat oven to 350 degrees.
2. Bring large cast iron pan to medium high heat.
3. Add grapeseed oil to cast iron and spread with heat resistant utensil to spread oil on
pan.
4. Rub seasoning into pork chops then add one side of pork down onto cast iron.
5. Sear pork for 3-4 minutes then turn and sear on other side for another 2-3 minutes.
6. Finish cooking pork chop in oven until medium internal temperature or until desired
level of doneness.
7. Once pork chop is removed from oven and resting, top chops with 1-2 T. of Apricot Lime
Glaze (recipe follows) or BBQ sauce of choice.

Apricot Lime Glaze

Ingredients:

1 T. Extra virgin olive oil
1 each Jalapeno, deseeded, finely minced
2 each Limes, juiced and zested
1 each Apricot jelly, local if possible, large jar – 16 ounces

Preparation:

1. Bring large sauté pan to medium heat.
2. Add olive oil. Add minced jalapeno and cook 1-2 minutes.
3. Add lime juice and lime zest to jalapeno and cook another 2 minutes.
4. Stir in apricot jelly with a whisk and stir until everything has heated through, 3-5
minutes.
5. Bring to low heat and keep warm until glaze is ready to use on protein source desired.
