Ingredients
- 2 each Whole wheat wraps/tortilla, burrito size
- 1 ½ lb. Chicken breast, grilled or baked with seasonings of choice
- 1 each Tomato, sliced and diced
- 1 cup Romaine lettuce, chopped
- 1 each Avocado, diced
- 4 slices Bacon, cooked and diced
- ½ cup Extra virgin olive oil
- 1 tsp. Dijon mustard
- 1 T. Honey, local if possible
- 1 tsp. Lemon juice
- ½ tsp. Lemon zest
- ½ tsp. Tarragon, fresh, minced
- ¼ tsp. Salt
Instructions
- Preheat oven to 375.
- Cook and prepare chicken to your liking (chill and dice/cut into bite-sized pieces).
- Bake bacon for 12-15 minutes.
- Remove bacon from oven and rest for 10 minutes. Once cool, dice into bite-sized pieces.
- In a small bowl, whisk together olive oil, mustard, honey, lemon zest, salt and tarragon.
- Assemble each burrito with 10 oz. of diced chicken, ½ diced tomato, ½ avocado, bacon and romaine. Drizzle dressing on top and roll the tortilla.
- Cut each burrito in half and enjoy!
