  • 4 each Carrots, medium, washed and unpeeled
  • 2 T. Honey, local if possible
  • ½ tsp. Cardamom, ground
  • 2 tsp. Olive oil
  • Salt and ground black pepper to taste


  • Preheat oven to 375 degrees.
  • Prepare a sheet pan with parchment paper to prevent the carrots from sticking to the pan.
  • Cut carrots ¼ inch thick and on a bias (slanted/hard angle medallions).
  • In a bowl, toss carrot slices with honey, cardamom, olive oil, salt, and pepper until evenly coated.
  • Spread slices evenly on the sheet pan, making sure they do not overlap.
  • Roast carrots in the oven for 45 minutes (feel free to check on carrots after 25 minutes). Remove from oven once they have reached your desired doneness.
