| 1 | oz | Mozzarella Cheese | ||
| 0.5 | oz | Parmesan Cheese | ||
| Procedures | ||||||
| 1 | Tenderize the chicken to insure the breasts are the same thickness throughout | |||||
| 2 | Dust the chicken in the flour then into the egg wash | |||||
| 3 | Move from the egg wash to the bread crumbs. Press down on the chicken to insure that the breading sticks | |||||
| 4 | Place a pan over medium heat and saute the chicken till golden brown on one side, flip & repeat | |||||
| 5 | Place the chicken on a baking sheet and top with 1oz. of marinara and mozzarella and parmesan cheese | |||||
| 6 | Place the chicken into a 375* oven to melt the cheese | |||||
| 7 | Plate the chicken and sauce with the remaining marinara sauce | |||||
