  • 2 T. Olive oil
  • 2, 5-6 oz. Chicken breast
  • 1 tsp. Chipotle powder
  • 1 tsp. Garlic powder
  • 1 tsp. Chili powder
  • 1 tsp. Ground cumin
  • Salt and pepper, to taste
  • 1/2 Lime


  • Preheat oven to 350 degrees
  • Using a cast iron pan, heat oil at moderate heat
  • Combine seasonings
  • Season chicken breast on both sides
  • Once pan is hot, add seasoned chicken breast and sear on one side for 2-3 minutes, until golden brown
  • Add the juice of the lime to the chicken
  • Place chicken on sheet pan and place in the oven for 7 minutes or until internal temperature reaches 165 degrees
  • Let rest for 2 minutes. Add extra lime juice if desired.
