  • 2 T. Olive oil
  • 2 each Chicken breast, 5-6 oz. each
  • 1 tsp. Chipotle powder
  • 1 tsp. Garlic powder
  • 1 tsp. Garlic powder
  • 1 tsp. Chili powder
  • 1 tsp. Ground cumin
  • to taste Salt and pepper
  • 1/2 each Lime, fresh


  • Preheat oven to 350 degrees.
  • Using a cast iron pan, heat oil at moderate heat.
  • Season chicken breast with seasonings and salt and pepper on both sides.
  • Once pan is hot, place chicken breast and sear on one side until golden brown for 2-3 minutes. Add the juice of ½ of a lime to the chicken and in cast iron pan.
  • Place chicken on sheet pan and finish in oven for 7 minutes or until internal temperature reaches 165F.
  • Let the chicken rest for 2 minutes once out of the oven. Add extra lime juice if desired.
