  • 6 slices Cinnamon raisin bread, sliced to thickness of choice
  • ½ can Coconut milk, full fat
  • ½ tsp. Pure vanilla extract
  • ½ tsp. Ground cinnamon
  • ½ tsp. Ground nutmeg
  • 2 T. Coconut oil, separated


  • In a large mixing bowl, stir together the coconut milk with the vanilla extract and spices.
  • Preheat a large saute pan to medium heat. Add 1-2 tsp. of coconut oil to the pan.
  • Working in batches of 2-4 slices at a time, evenly coat each slice of bread with the coconut milk batter. Feel free to soak the bread for 5 minutes prior to cooking.
  • Sear each side of the coated bread for 2-3 minutes on each side.
  • Finish baking in the oven if desired (not necessary). Enjoy!
  • Garnish with additional cinnamon and honey.
