Ingredients
- 6 slices Cinnamon raisin bread, sliced to thickness of choice
- ½ can Coconut milk, full fat
- ½ tsp. Pure vanilla extract
- ½ tsp. Ground cinnamon
- ½ tsp. Ground nutmeg
- 2 T. Coconut oil, separated
Instructions
- In a large mixing bowl, stir together the coconut milk with the vanilla extract and spices.
- Preheat a large saute pan to medium heat. Add 1-2 tsp. of coconut oil to the pan.
- Working in batches of 2-4 slices at a time, evenly coat each slice of bread with the coconut milk batter. Feel free to soak the bread for 5 minutes prior to cooking.
- Sear each side of the coated bread for 2-3 minutes on each side.
- Finish baking in the oven if desired (not necessary). Enjoy!
- Garnish with additional cinnamon and honey.
