Coconut Cashew Mahi Mahi
Yield: 2, 4oz servings
Ingredients:
2, 4oz pieces Mahi Mahi
2 Tbsp Cashews, untoasted, chopped
2 Tbsp Coconut Flakes, untoasted
¼ cup Panko breadcrumbs
1 Tsp Avocado Oil
Pinch Salt & Black Pepper
1 Tsp Sriracha
¼ Tsp Smoked Paprika
¼ Tsp Minced Garlic
Directions:
- In a bowl, mix together chopped cashews, coconut, panko, avocado oil, salt, pepper, sriracha, smoked paprika, and garlic
- Put Mahi Mahi on a sheet tray lined with parchment. Add half of the mixture to the top of each mahi mahi (approx ¼ cup each), pressing to hold onto mahi mahi.
- Put in a 375 degree convection oven (400 degrees if conventional)
- Cook for 6-8 minutes depending on thickness.
Chef Notes:
- If the piece of fish is super thick, cut in half or butterfly it to create more surface area for your crust!
