DATE TRUFFLES

A delicious afternoon or evening snack. They are also a great seasonal treat! 

Makes: 20-24 truffles

Total Time:  30 minutes 

 

Ingredients:

2 cups Medjool dates, pitted

½ cup, each Toasted or raw nuts: cashews, 

almonds, pecans 

¼ cup Water

¼ tsp Kosher salt or pink salt

½ tsp Vanilla extract 

1 tsp Cinnamon 

to taste Cacao powder, for coating  

 

Directions:

  1. Add all of your ingredients, except for cacao powder, to a food processor. Pulse until the mixture is sticky and can be formed into a ball. 
  2. Remove the mixture from the food processor and form into 20-24 balls. 
  3. Place the formed balls on a parchment paper lined baking sheet or in a preferred container to go in the fridge for about 20 minutes so they can set. 
  4. In a shallow pan or bowl, add a small amount of cacao powder, about ¼ cup. Add the date truffles one by one to the pan or bowl and shake or move them around with your hand until the balls are evenly coated with cacao powder. 
  5. Enjoy! Store them in an airtight container for up to 10 days in the refrigerator.
