Delicata Squash Soup

Servings: 8-10 

Skill Level:  Beginner

Total Time:  30-45 minutes 

 

Ingredients:

 

2 medium Delicata squash, cut into thick slices 

1 large Onion, diced 

1 large Carrot, peeled and diced 

1 bunch Celery, remove leaves & base, diced 

2 T Olive oil 

½ tsp Salt

¼ cup Fresh sage 

2 quarts Vegetable stock

 

Directions:

 

  1. Preheat oven to 375 degrees Fahrenheit. 
  2. Halve and clean two delicata squash. Cut into thick slices. 
  3. Roast 15-20 minutes or until soft. 
  4. Dice onion, carrot, and one bunch of celery and set aside. 
  5. Heat a large stock pot over medium, and add oil. 
  6. Add salt, rubbed sage, squash and pour in roughly 2 quarts of stock, enough to submerge the rest of the ingredients. 
  7. Bring to a boil. 
  8. Blend with an immersion blender and enjoy!
