Ingredients
- ¼ cup Olive oil
 - 2 T. Champagne vinegar
 - 1 T. Orange juice
 - 1 tsp. Orange zest
 - ½ T. Honey
 - pinch Salt
 - 2 cups Edamame, defrosted and out of the shell
 - 2 cups Mixed greens, arugula and spinach as examples
 - ½ each English cucumber, sliced on the bias
 - 1 each Red bell pepper, diced
 - ¼ cup Dried cranberries
 - ¼ cup Pecans, toasted and halved
 
Instructions
- In a small mixing bowl, combine liquid ingredients and salt and whisk well.
 - Add remaining ingredients to a large mixing bowl and toss gently with the dressing until everything is coated.
 - Enjoy!
