Ingredients
- 4 cups Freekeh, cooked (whole grain)
- ½ cup Kale, shredded
- ¼ cup Celery, diced
- 2 T. Olive oil
- 1 T. Apple cider vinegar, unfiltered
- 1 T. Lemon juice, fresh
- 4 leaves Mint, fresh, finely chopped
- ½ tsp. Kosher salt
Instructions
- Cook freekeh in vegetable broth. Rinse and cool whole grain and set aside.
- Thinly slice the celery and shred kale and place into a large mixing bowl.
- Once grain is cooled, add freek to the kale and celery and mix with the remaining ingredients. Season to taste.
- Enjoy this whole grain with your favorite protein.
- This keeps fresh in an airtight container for up to 5 days.
