Ingredients
- 5 lbs. Turkey breast
- ¼ cup Garlic cloves, peeled, chopped
- ¾ cup Fresh mixed herbs, rosemary, basil, sage, chopped
- 2 T. Olive oil
- to taste Kosher salt
Instructions
- Place 5 lb. turkey breast in a large roasting pan.
- Use a sharp knife to deep score (cut) into the thickest part of the turkey breast, making 2-4 scores.
- Using the same sharp knife, make smaller scores (2-3 total) into the thinner part of turkey breast.
- Take the chopped garlic cloves and stuff them into the scores, “plugging” the garlic into the turkey breast.
- Add the chopped herbs to the turkey breast, plugging them with the garlic cloves.
- Drizzle olive oil over the turkey breast. Cover the pan with foil and place in the fridge for at least 90 minutes.
- Preheat oven to 375 degrees. Cook covered herbed turkey breast for 60 minutes. Remove the foil and cook for another 30 minutes or until internal temperature 150-155 degrees.
- Allow the turkey to rest for 15-30 minutes before slicing.
- Season before serving. Enjoy!
