Here at Skyterra we stock our freezer with these nutrient packed bites for our hikers. Feel free to create your own hike bite recipe using our guide here so YOU TOO can fuel your movement! These are great to batch prep and store in your freezer as balls or press into a 9x9" pan and cut into 16 pieces for a delicious yet nutritious mid-day snack or sweet treat before bed. Skill Level: Beginner.

Ingredients
- 1 Cup Cashews raw, unsalted
- 1 Cup Nut(s) of choice pistachio, pecan, walnut
- 1 Cup Medjool dates pitted
- 1 Cup Dried fruit(s) of choice golden or red raisins, cranberries, apricots, cherries
Add ons:
- 1/2 tsp Salt of choice Kosher, Himalayan, Celtic, course
- 1/4 cup Dark chocolate chips
- 1/4 cup Unsweetened shredded coconut (optional)
Instructions
- Puree cashews and dates together in a food processor until well blended.
- Add remaining ingredients and pulse until well blended and the mixture is formed. Add a small amount of water, as needed, to aid in mixture sticking together.
- Remove mixture and place in mixing bowl.
To form hike bite balls:
- Form bites, approximately one heaping tablespoon each. Ball up mixture, placing hike bites in a sealed container for storage either in the freezer or refrigerator.
To form squares:
- Alternatively, place the mixture on a parchment paper lined 9x9" glass pan or onto a parchment paper lined small baking sheet. Place in the freezer for at least 1 hour or up to 24 hours. Remove from pan or baking sheet, onto a cutting board, then cutting the frozen mixture into 16 pieces. Transfer hike bikes to a sealed container for storage in the freezer or refrigerator.
Shelf Life -
- Store in the refrigerator for up to 2 weeks and long term in the freezer for up to 3 months.
