  • 6 oz. Chipotle in Adobo, stems discarded
  • 1 each Garlic clove, peeled
  • ½ T. Dried oregano
  • ¼ bunch Cilantro, stems and leaves
  • ½ each Lime, juiced
  • 1 oz. Honey, local
  • ½ oz. Water
  • 1 oz. Red wine vinegar
  • 5 oz. Olive oil
  • to taste Salt and pepper


  • Using blender/Vitamix, blend all ingredients except olive oil until smooth consistency.
  • Slowly immerse olive oil with ingredients while blender is on low to moderate setting.
  • Check consistency and adjust seasonings. Make sure not to over blend.
  • Use salt and pepper to taste.
  • Enjoy!
