Lemon Hike Bites

Portion Size: 2 ounces

 

Ingredients

1 cup Cashews

½ cup Almonds

1 cup Dates

1 Tbsp Honey (optional)

1 each Lemon zested and juiced

1 tsp Lemon extract

Method of Preparation

  1. Add all ingredients to a food processor and process until ingredients are broken up, but still chunky.
  2. Check the texture and add more dates if it is too dry and more cashews if it is too wet.
  3. Scoop into 2 ounce balls.
  4. Store portioned hike bites in the fridge or freezer.
