Ingredients
1 cup Cashews
½ cup Almonds
1 cup Dates
1 Tbsp Honey (optional)
1 each Lemon zested and juiced
1 tsp Lemon extract
Method of Preparation
- Add all ingredients to a food processor and process until ingredients are broken up, but still chunky.
- Check the texture and add more dates if it is too dry and more cashews if it is too wet.
- Scoop into 2 ounce balls.
- Store portioned hike bites in the fridge or freezer.
