  • 1 each Mango, ripe, peeled and diced
  • 2 each Peaches, ripe, diced
  • ½ each English cucumber, seeded, sliced into strips and cubed
  • 1 each Poblano pepper, seeded, julienned
  • 1 each Ancho pepper, seeded, julienned
  • 1 each Orange, juiced
  • 3 T. Olive oil
  • 1 tsp. Zaatar spice, to taste
  • 5 each Mint leaves, minced
  • 1 medium Bok choy, thinly sliced (optional)
  • 1/2 tsp. Salt, to taste


  • Combine all ingredients into a medium mixing bowl. Stir well and season to taste.
  • Let this rest for at least 30 minutes before serving. Enjoy!
