Ingredients
- 1 each Mango, ripe, peeled and diced
- 2 each Peaches, ripe, diced
- ½ each English cucumber, seeded, sliced into strips and cubed
- 1 each Poblano pepper, seeded, julienned
- 1 each Ancho pepper, seeded, julienned
- 1 each Orange, juiced
- 3 T. Olive oil
- 1 tsp. Zaatar spice, to taste
- 5 each Mint leaves, minced
- 1 medium Bok choy, thinly sliced (optional)
- 1/2 tsp. Salt, to taste
Instructions
- Combine all ingredients into a medium mixing bowl. Stir well and season to taste.
- Let this rest for at least 30 minutes before serving. Enjoy!
