Ingredients
- 4 each Chicken thighs, boneless and skinless, 5 oz. each
- ½ cup Cashews, raw, crushed or chopped
- ½ cup Almonds, blanched, crushed or chopped
- 2 each Eggs
- ¼ cup Olive oil
- ¼ tsp. Salt
Instructions
- Preheat oven to 375 degrees.
- Prepare a baking sheet by lining with parchment paper and lightly coating with olive oil.
- Lightly whisk eggs in a medium bowl.
- In a separate bowl, mix nuts together.
- Dredge chicken thighs in eggs, evenly coating them.
- Transfer chicken to nuts and evenly coat.
- Arrange nut crusted chicken on baking sheet. Season chicken with a pinch of salt.
- Bake 15-22 minutes or until chicken is done. Enjoy!
