  • 4 each Chicken thighs, boneless and skinless, 5 oz. each
  • ½ cup Cashews, raw, crushed or chopped
  • ½ cup Almonds, blanched, crushed or chopped
  • 2 each Eggs
  • ¼ cup Olive oil
  • ¼ tsp. Salt


  • Preheat oven to 375 degrees.
  • Prepare a baking sheet by lining with parchment paper and lightly coating with olive oil.
  • Lightly whisk eggs in a medium bowl.
  • In a separate bowl, mix nuts together.
  • Dredge chicken thighs in eggs, evenly coating them.
  • Transfer chicken to nuts and evenly coat.
  • Arrange nut crusted chicken on baking sheet. Season chicken with a pinch of salt.
  • Bake 15-22 minutes or until chicken is done. Enjoy!
