Ingredients
- 3 Tbsp. extra virgin olive oil
- 1 ½ Tbsp. lemon juice, fresh
- 2 lbs zucchini, very thinly sliced lengthwise on mandolin or with knife
- 1 tsp. lemon zest, finely grated
- 1/3 cup parmesan cheese, shaved
- 3 Tbsp. pistachios, lightly toasted
- Salt and pepper to taste
Instructions
- In a small bowl, whisk the oil with the lemon juice and zest. Season with salt and pepper.
- In large bowl, toss the sliced zucchini with the lemon dressing.
- Add the parmesan cheese and pistachios and toss again. Serve and enjoy!
