  • 3 T. extra virgin olive oil
  • 1 ½ T. lemon juice, fresh
  • 2 lbs zucchini, very thinly sliced lengthwise on mandolin or with knife
  • 1 tsp. lemon zest, finely grated
  • 1/3 cup parmesan cheese, shaved
  • 3 T. pistachios, lightly toasted
  • Salt and pepper to taste


  • In a small bowl, whisk the oil with the lemon juice and zest. Season with salt and pepper.
  • In large bowl, toss the sliced zucchini with the lemon dressing.
  • Add the parmesan cheese and pistachios and toss again. Serve and enjoy!
