This rosemary honey dressing is a tasty, creamy vinaigrette that's thickened with avocado and sweetened by honey. Skill Level: Beginner. Shelf Life: 1 week refrigerated.

Ingredients
- 1 avocado, flesh removed
- 2 Tbsp. fresh rosemary
- 2 Tbsp. honey (local if possible)
- ¼ cup champagne vinegar
- 1/3 cup extra virgin olive oil, or oil of choice
- ¼ tsp. salt
- Water for thinning
Instructions
Food Processor:
- Place all ingredients EXCEPT FOR the oil and water into the food processor.
- Turn processor on and let everything blend together.
- With the food processor continuing to run, slowly add your oil to emulsify the dressing.
- Adjust taste with the salt, pepper, and honey, mixing after each addition.
- Blend water into the dressing if it is too thick to pour.
Blender:
- Place all ingredients EXCEPT FOR the oil and water into the blender.
- Turn processor on and let everything blend together.
- While continuing to blend, slowly add your oil to emulsify the dressing.
- Adjust taste with the salt, pepper, and honey, blending after each addition.
- Blend water into the dressing if it is too thick to pour.
Hand Mixer or Immersion Blender :
- Place all ingredients EXCEPT FOR the oil and water into a container.
- Place the hand blender into the dressing and turn it on. Mix thoroughly. (Make sure the blade is completely immersed into the product)
- While continuing to blend, slowly add your oil to emulsify the dressing.
- Adjust taste with the salt, pepper, and honey.
- Blend water into the dressing if it is too thick to pour.
