Spinach Hummus

Ingredients:

 

3 T. Extra virgin olive oil

2 cups Toasted chickpeas

1 T. Tahini

½ cup Extra virgin olive oil

2 cups Spinach, fresh

1 oz. Lemon juice, fresh

½ tsp. Ground cumin

½ tsp. Coriander, toasted

to taste Salt

 

Directions:

  • Boil and cook chickpeas as needed, cook until al dente. 
  • Bring large sauté pan to medium high heat.  Add 3 T. of extra virgin olive oil. 
  • Toast chickpeas in olive oil until browned and toasted to your preference.
  • Add all ingredients into food processor and blend until well combined.  
  • Enjoy with vegetables of choice or use however you please!
