  • 1 can Coconut milk, full fat
  • 3 T. Chia seeds
  • 1 ½ T. Honey, local
  • ½ T. Pure vanilla extract


  • Add all ingredients to a medium sized mixing bowl. Stir all ingredients until well combined.
  • Cover bowl with airtight seal, saran wrap, or pour into single serve portions (e.g., ramekins).
  • Allow the mixture to chill for at least 2 hours before serving. Feel free to let this chill and rest overnight.
  • Enjoy in the morning, as a snack and add toppings such as mixed berries or cooked apples.
