Roasted Red Bell Pepper Soup

 

Course Soup

Ingredients

  • 1 ea Yellow Onion sliced thin
  • 4 ea Red Bell Pepper
  • 1 gal Vegetable Stock
  • 1 oz Garlic – chopped
  • 1 oz Cooking Oil
  • 1 oz Sherry
  • 1 TBSP Chili Powder
  • 1 TBSP Paprika
  • 1 TSP Oregano
  • 1 tsp Salt

Instructions

  • Preheat oven to 350 degrees
  • Roast onions, garlic, red bell pepper in an oven with Chili powder, paprika, oregano, salt, & black pepper for 15 min
  • Add ingredients to a pot with oil and heat until sizzling
  • Deglaze with sherry and reduce
  • Add vegetable stock and simmer until vegetables are mashable
  • Blend with an immersian blender or a vitamix
  • Adjust for seasonings
