Ingredients
- 1 ea Yellow Onion sliced thin
- 4 ea Red Bell Pepper
- 1 gal Vegetable Stock
- 1 oz Garlic – chopped
- 1 oz Cooking Oil
- 1 oz Sherry
- 1 TBSP Chili Powder
- 1 TBSP Paprika
- 1 TSP Oregano
- 1 tsp Salt
Instructions
- Preheat oven to 350 degrees
- Roast onions, garlic, red bell pepper in an oven with Chili powder, paprika, oregano, salt, & black pepper for 15 min
- Add ingredients to a pot with oil and heat until sizzling
- Deglaze with sherry and reduce
- Add vegetable stock and simmer until vegetables are mashable
- Blend with an immersian blender or a vitamix
- Adjust for seasonings
