Roasted Red Bell Pepper Soup

Ingredients

1 ea Yellow Onion, sliced thin
4 ea Red Bell Pepper
1 gal Vegetable Stock
1 oz Garlic – chopped
1 oz Cooking Oil
1 oz Sherry
1 TBSP Chili Powder
1 TBSP Paprika
1 TSP Oregano
1 tsp Salt

 

Procedures

Preheat oven to 350 degrees
2 Roast onions, garlic, red bell pepper in an oven with Chili powder, paprika, oregano, salt, & black pepper for 15 min
3 Add ingredients to a pot with oil and heat until sizzling
4 Deglaze with sherry and reduce
5 Add vegetable stock and simmer until vegetables are mashable
6 Blend with an immersian blender or a vitamix
7 Adjust for seasonings
