Ingredients
- 1 cup Almond flour
- 1 ½ cups Oat flour
- 1 T. Flaxmeal or ground flaxseed
- 1 T. Baking powder
- ½ tsp. Salt
- 1 tsp. Ground cinnamon
- 4 each Eggs
- 1 tsp. Vanilla extract
- ½ tsp. Lemon zest
- 1 each Lemon juiced
- 2/3 cup Pure maple syrup
- 2/3 cup Virgin coconut oil melted
- 1 each Grated apple choice apple
- ½ cup Slivered almonds
- ½ cup Rolled oats for topping
- ½ cup Walnuts chopped for topping
- 2 T. Coconut oil melted for topping
- ½ T. Sugar for topping
- ½ tsp. Ground cinnamon for topping
- 1 tsp. Pure maple syrup for topping
Instructions
- Preheat an oven to 350 degrees.
- Add both flours, flaxmeal, baking powder, salt and cinnamon into a large mixing bowl. Whisk and set aside.
- Grate your apple of choice and place in a separate mixing bowl.
- Add eggs, extract, zest, lemon juice, maple syrup, and coconut oil to the apples and mix until well combined.
- Add the wet ingredients to the dry ingredients and stir with a spatula until combined. Avoid over-mixing.
- In a small bowl, combine topping ingredients and stir well.
- Top each muffin with a small amount of the almond walnut mixture.
- Bake for 25-30 minutes. Enjoy!
